panna cotta with berries

Panna Cotta

Servings 8 4 ounce portions

Ingredients
  

  • 1 packet unflavored gelatin
  • 2 ounces cold water
  • 2 cups heavy cream
  • ¾ cups sugar
  • ¼ tsp salt
  • cups buttermilk
  • ¼ cup milk
  • tsp vanilla extract

Macerated Berries

  • 1 cup strawberries
  • 1 cup blueberries
  • ¼ cup sugar
  • 1 tbsp lemon zest

Instructions
 

  • Bloom gelatin in the cold water by stirring the gelatin into the water to be sure it will all bloom evenly. When its bloomed melt in the microwave and set aside.
    1 packet unflavored gelatin, 2 ounces cold water
  • Add the cream, sugar, and salt to a pot and heat to melt the sugar. You don't want the cream to get to hot because you'll just need to cool it down again. Heat just until the sugar is completely dissolved.
    2 cups heavy cream, ¾ cups sugar, ¼ tsp salt
  • Stir in the gelatin and allow the mixture to cool 15 minutes.
  • mix together the buttermilk, milk and vanilla extract and add to the cream mixture.
    1½ cups buttermilk, ¼ cup milk, 1½ tsp vanilla extract
  • Pour into vessels of choice and wrap with plastic wrap. Allow to set in the refrigerator overnight.

Macerated Berries

  • Don't macerate the berries to early. I recommend doing this 1-2 hours before you need it.
  • Slices berries to desired size and place into a bowl.
    1 cup strawberries, 1 cup blueberries
  • Add sugar and lemon zest to the bowl and mix.
    1 tbsp lemon zest, ¼ cup sugar
  • Refrigerate until needed.
